Learn to make fresh pasta dough perfect for rolling out by hand to create delicate ravioli, tortellini, and agnolotti. We will make fresh ricotta cheese to use in creating a variety of delicious fillings. After practicing filling and shaping our pasta, we will prepare some simple sauces and taste our creations. You will leave this class with all the skills you need to make your own filled pastas at home.

What’s On the Menu?

 

Agnolotti w/Lemon Thyme Ricotta
Pronounced (ah-nyuh-laht-tee), these tender bite-sized pillows of pasta, plump with a creamy filling, are easier to make than you might think.

Tortellini w/Sage Mushroom Duxelle & Ricotta
With its ring or “belly button” shape and ability to hold meat, cheese, or vegetable fillings, this a very versatile filled pasta. Put them in a soup, toss them in a salad, or simply smother them in your favourite sauce.

Ravioli w/Butternut Squash & Ricotta
Delicate pasta squares with a luscious, creamy, garlic-roasted squash filling and served with a brown butter sauce. This dish is sure to impress your friends and family.
